After your shopping, you keep your eggs at room temperature. But is it ideal?

Diarrhea, fever and cramps. Here are the symptoms of salmonella contamination. This is the most important risk in storing eggs. So should we refrigerate them or keep them at room temperature to avoid any danger?

The egg does not cope with changes in temperature. According to European legislation, eggs must be kept cool as there is a risk of bacteria developing on the shell if condensation forms at room temperature. This condensation will facilitate the growth of bacteria and their penetration into the egg. And this because of an alteration of its protective layer caused by contact with water.

It is therefore strongly recommended not to wash the product. This can damage the shell which has a set of antimicrobial properties, which provide an effective barrier against bacterial contamination.

They must therefore be kept cool, ideally below 11 °. The fridge or the cellar are therefore the best solutions. However, be careful not to place them in the door of your refrigerator. Shocks can damage them. The ideal is to leave them in their box inside the fridge.
